August is the new September.

There was once a fairly reliable idea of when grapes are harvested in Europe. The grape harvest belonged to autumn.

There was once a fairly reliable notion of when grapes were harvested in Europe. The grape harvest belonged to autumn. To cool mornings, damp earth, shortening days and the first jumper. September was harvest time; in some regions, such as the Mosel, Rheingau and Burgenland, October too. In 2026, that memory already seems somewhat historical. In Catalonia, harvest workers are standing in the vineyards at three in the morning with headlamps, because later in the day it becomes too hot for people and grapes. In Champagne, harvesting began in early August, and in parts of Italy as early as the end of July. And Benoît Ente, one of the renowned winemakers of Puligny-Montrachet, had his entire harvest in the cellar by 15 August. Not the first grapes for Crémant, not a few early-ripening parcels: finished. The old French winemakers’ saying “Août fait le moût” – August makes the must – is taking on a new meaning. August is now making the wine.

What sounds like a mere shift in the calendar is considerably more complicated. Grapes do not have a built-in ripeness switch: sugar, acidity, aromas, skins, seeds and tannins develop simultaneously – but not necessarily at the same pace. This very balance is increasingly being disrupted by hot summers. High temperatures drive sugar levels upwards and accelerate the breakdown of malic acid. Warm nights exacerbate the problem, because the grape continues to respire at night and consumes acid in the process. Drought, in turn, can reduce the water content of the berries and thereby concentrate the sugar further. The measuring device then says: ripe. The grape itself may be saying something else. It has become sweeter, but not necessarily more mature. For the winemaker, this begins a distinctly uncomfortable game of poker. Harvest early and preserve acidity – with the risk that the aromas and phenolics have not yet fully developed? Or wait and thereby lose more acidity, gain more alcohol and risk sunburn, raisining or complete water stress? Early harvesting is therefore far from always being an expression of perfect early ripeness. Sometimes it is simply an emergency brake.

The extent to which this development has now progressed is impressively demonstrated by the 2026 European vintage. In the French Aude, the first Muscat grapes were harvested in mid-July. Gramona began harvesting Chardonnay and Pinot Noir in Catalonia’s Anoia region on 22 July – earlier than ever before in the history of the estate. Franciacorta began for the first time ever while it was still July, and in Rioja Oriental the harvest began on 6 August. Particularly noteworthy is an observation by Jean-Baptiste Lécaillon, cellar master at Louis Roederer: on 15 August 2026, sugar, acidity and grape weight had reached approximately the levels they had only reached on 3 September in the legendary hot year of 1976. Nineteen days’ difference. Even the old winemakers’ rule of thumb, according to which approximately 90 to 100 days elapse between flowering and harvest, is beginning to crack. In some early French vineyards, it was barely more than 80 days this year.

And then there is the lack of water. France experienced an extremely dry summer; in July, approximately 70 per cent less rain fell nationwide than usual. At first, that sounds like concentration and therefore like something wine lovers would normally be pleased to talk about. Small berries, plenty of skin, little juice: these can indeed produce great wines. But only as long as the vine is still functioning. In the face of severe water shortages, it closes its stomata, reduces photosynthesis and can almost bring its physiological development to a standstill. The sugar level nevertheless continues to rise through water loss. Once again, this creates the dangerous optical illusion of this new wine-growing climate: analytical ripeness without necessarily corresponding aromatic ripeness. Small berries therefore do not automatically mean great wines. They may be an expression of perfect concentration – or simply a sign that the vine has run out of water.

The long-term consequences of this will change European viticulture more profoundly than some currently fashionable cellar philosophy. Later-ripening varieties and those that retain their acidity better could become more important. Even more decisive, however, will be the site, altitude, exposure, water-retaining soils and old, deep-rooted vines. Winemakers have long been responding: with later pruning, more shade, less leaf removal, building up humus and searching for cooler parcels. Climate change does not simply make wine ripen faster. It is decoupling the processes that ran together with reasonable reliability for centuries. No one yet knows how good the 2026 vintage will actually be in the end. But one thing can already be said: more sun does not automatically mean more ripeness. More sugar does not automatically mean more quality. And harvesting later does not automatically mean better wine. August is the new September. Only nature has not simply moved the calendar forward by a few weeks. It is beginning to change the rules.
